Carefully cross-cut into convenient rings, this oxtail comes from our slow-matured heritage breed cattle, raised on a 100% grass-fed diet within the peaceful, chemical-free landscapes they call home.
Because Dexters are a smaller, traditional breed, their oxtail is famously concentrated in flavour. Each ring features a high proportion of nutrient-rich bone and marrow surrounded by deep, dark, slow-grown muscle. This unique anatomy is what gives the Dexter oxtail its legendary status among chefs and home cooks alike.
