Our whole Dexter beef tongue is a true gourmet delicacy, prized for its incredibly fine grain and meltingly soft texture. Sourced from slow-grown heritage cattle, these tongues come from animals raised on a 100% grass-fed diet, roaming pure, chemical-free pastures.
The Dexter’s natural propensity for fine marbling extends even to this specialty cut. Because our cattle forage on diverse natural herbage, the meat develops a clean, sophisticated flavour profile that is both rich and remarkably delicate.
Once slow-simmered, the tongue becomes exceptionally tender, often described as the most delicate muscle on the entire animal.
Our beef tongue is free from chemicals, offering a clean source of healthy fats, zinc and B vitamins.
Chef’s Tip: To unlock its potential, simmer the tongue whole with aromatics (onion, peppercorns, bay leaves) for 3-4 hours until tender. Peel while still warm to reveal the succulent, fine-grained meat beneath, then slice thinly.
